Mango Salad

Here’s a little mango salad recipe I made up.

2 mangos (peeled)
1/4 red onion
A handful of mint
Two Habanero chili peppers (if you like it spicy!)
A splash of lime juice
A touch of honey
A double splash of olive oil
A few drops of basil oil

Chop it all up! Stir together. Now serve!

Just like that – you are a top chef!

Zucchini Balls

In Oregon the saying goes that if you are not given zucchini by friends you have no friends. There is so much of this lovely veggie. It’s time to use the love!

You can make this recipe with almost any veggie. Well, except okra and tomatoes! What is in season for you?


• 2-3 zucchinis – shredded
• 2-3 eggs – from the co-op or your own chickens (look for my next blog on how to!)
• 1 pot cooked rice — I love to mix black and brown rice with quinoa…beautiful! (2 parts water, 1 part rice)
• 1 Bay leaf – throw it in the rice for fun
• 1 cup shredded HARD cheese – I use goat cheese. Just use what you love (though brie is a tad too messy!)
• ¼ Cup olive oil – I just pour as I see fit and I never measure…feel the love!
• Any chopped herb – oregano and thyme are super yummy
• Salt – never white…use the good stuff!

Summertime Chickpea Salad

Summertime Chickpea Salad

1 bag chick peas (soak overnight and cook for 2-3 hours the next day…or use canned, just don’t tell me!)
1 red onion, sliced as you see fit
1 jar capers
A pinch of sea salt – pink if you can get it
A big bunch of spinach – chopped!
A handful of sundried tomatoes
2-3 pods of fresh garlic – smashed!
A handful of your favorite crumbly cheese – Feta rocks here
Your favorite herb – whatever needs to be cut!

Grilled Onion and Feta Tart

Grilled Onion and Feta Tart

Olive oil (as much as you see fit!)
2-3 onions – sliced
A touch of brown sugar
A pinch of sea salt (I love my grey salt – minerals galore!)
1 block of puff pastry/or one slice lavish bread/or one pizza crust (made or bought – you choose)…or half moons – they work perfectly for the base
Parmesan cheese – you choose how much…somewhere between half and one cup – it’s your tart!
Feta cheese – let her roll here…at least a cup
